I haven’t had luck creating recipes, but I like exploring the internet to find new ones.  The hardest part of meal planning is finding meals I’m interested in making that don’t require a lot of ingredients I don’t have.

Here are some that I’ve tried and liked, and some that I want to try in the near future.  Most (not all) are pretty frugal, and none require you to buy truffle oil.  I love cooking, but I am not super skilled, so if I can make them, you can too.

Fettuccine with Sweet Pepper-Cayenne Sauce:  Easy and delicious!

Grilled Cheese with tomatoes and peppers The title says it all.  Grilled cheese is my favorite comfort food.

Pizza crust for homemade pizzas:  Homemade pizza’s are a must have skill!

Quinoa Pudding:  I used to make these to eat for breakfast like oatmeal, but quinoa has gone up in price so it has been awhile.  (And I didn’t use whole milk.)

Balsamic Chicken with Mozzarella:  Yum!

Avocado Smoothie:  Because in California, everything can be made with avocado

Egg Scramble:  This isn’t a recipe, per se, but a simple way to add some protein to my diet. Scrambled eggs + chopped tomoato + spinach + feta.  Yum.

African Peanut Soup:  Soup, with peanut butter!  Better than you’d imagine!

Lexy’s Whole Bowl (beans and rice):  An attempt to mimic the Whole Bowl food cart we ate at in Portland.  Personally, I would leave out the chicken.  [Haven't actually made this one... yet.]
